Justin EddyGeneral Manager
As General Manager, Justin Eddy is responsible for overseeing the daily operations, staffing, training, service and guest relations for Ad Hoc + Addendum. He collaborates with Chef Matt Alba to elevate the guest experience and positively impact the working environment for the restaurant team.
Justin first joined Ad Hoc + Addendum as its Assistant General Manager in 2018 after serving as Dining Room Manager at Bouchon Bistro in Yountville. Prior to Bouchon, he managed Cooper’s Hawk Winery and Restaurants in Tampa, Florida. A Florida native, he began a path in hospitality initially to support his education but was quickly enthralled by the profession — loving the new challenges presented to him each day, the way he could have a positive impact on people’s dining experiences, and the sports-like collaborative mentality of the team. Working at Ad Hoc + Addendum reminds Justin of the childhood potlucks at his Grandmother’s house where the dinner was family-focused, the conversation vibrant, and the meal hearty and delicious.
He prides himself on building lasting relationships and making strong connections not only with his colleagues but with guests, purveyors and the Yountville community. As General Manager, he strives to maintain an environment that is both positive and dynamic.
Justin has a B.S. in Microbiology from the University of Florida.
