Elias Mandilaras

General Manager

As general manager, Elias Mandilaras brings more than a decade of restaurant management experience to Ad Hoc + Addendum, where he oversees the daily operations, staffing, service and guest relations for the restaurant. 

Most recently, he served as the general manager for Flip Hospitality in Santa Rosa, Calif. where he was responsible for hiring, training, forecasting, purchasing, scheduling, and marketing for two restaurants specializing in the sports bar atmosphere and cuisine.  He has also held management positions in New York at Dos Caminos, Ovelia and Ruby Foos.  

During his tenure with Dos Caminos, a BR Guest Hospitality restaurant, Elias was recognized by the group as the “Leader of the Year” in 2012.  At this time he was certified by the Tequila Regulatory Council and became a Certified Guest Lecturer for New York University’s Hospitality Management program on the topics of customer relations management and restaurant finance.

Elias holds a Bachelor of Arts in Hospitality Management from Johnson and Wales University.
