Guillaume Chamot-Rooke

Director of Bouchon Bakeries

Guillaume Chamot-Rooke is Director of Bouchon Bakeries whose primary focus is on retail strategy and operations .  With a careful eye, he serves as a conduit to all the bakeries throughout the United States. His brings extensive experience and leadership to this new role.    

Service-driven and proactive, Guillaume served as Director of US Operations for Ladurée bringing this company to new heights while making their presence in the US both recognized and respected. Prior to Ladurée, he served as the Restaurant Director for La Grenouille for twelve years and was part of the 2011 winning team for Outstanding Service from the James Beard Foundation.

Born and raised in France, Guillaume discovered hospitality when he was fifteen years old and helped bus tables at a family-owned restaurant during a summer vacation. He credits this experience with motivating him to begin studying at Ecole Hoteliere de Paris the following year. He brings to our bakeries a European sensibility, a deep reverence for quality production and a keen awareness of the importance of branding and standards.

Guillaume holds a Bachelor of Technology Restaurant and Food Service Management from the Ecole Saint Louis de Montargis and a Certificate of Professional Training in Restaurant Management from the Ecole Hoteliere de Paris.
