John WardHead Baker
As head baker, Chef John Ward is responsible for all bread production for our Hudson Yards properties, Bouchon Bakery and TAK Room, in addition to the production of all laminated viennoiseries for Bouchon Bakery.
Chef Ward began his career with Chef Keller in June 2015 as Chef de Partie at Bouchon Bakery & Café located in Time Warner Center. He was promoted to Sous Chef in 2016, Executive Sous in 2017, and in May 2018, departed to join Per Se as the Head Baker. Prior to his work with Chef Keller, John was a baker at Pondicheri Café in Houston, Texas, while simultaneously working as professional musician and viola teacher.
John was originally drawn to baking through his fascination by the transformation of simple ingredients into beautiful products. After a memorable experience baking his first loaf of bread, he knew he wanted to make it career. With his background as a trained musician, John understands and appreciates the standards of detail and finesse expected at Chef Thomas Keller’s bakeries.
Coming from a large, tight-knit family, John has always cherished the times they would gather together for big holiday meals. While in college, he enjoyed sharing his family traditions and cooking for his friends who couldn’t make it home during short holiday breaks. This deep satisfaction of cooking for and eating with loved ones is what made John want to explore cooking in a more professional setting.
John holds a Bachelor of Music from the University of North Carolina at Greensboro and a Master of Music in Viola Performance from the Cleveland Institute of Music.
